Chicken Mango Chutney a la mrithail

As you may already now, in this blog I write mainly about things I do, things I read, things I watch… well, since I arrived to Karlskrona, one thing I do almost everyday is cooking, so maybe in the next months you see how this category grows…

Chutney 2

One of the things I like most of cooking, is that you can always improvise and cook something different… that’s what weelsha and I have done here, with this recipe based on chicken and mango chutney.

Ingredients (for 2 people): 500 gr. chicken. half minced onion 150 gr. mild mango chutney. some nut pines. rice. black pepper. oregano. 2 eggs. 2 pita breads. olive oil.

Directions: Cook the rice with some oregano and black pepper.

Mince the onion and put it in a frying pan with a little bit of oil. When it’s beginning to become transparent, add the chicken cut into strings. When the chicken gets golden, add the mango chutney and stir constantly. Keep cooking until the chicken has absorbed most of the mango chutney, add some nut pines, wait two minutes and its ready.

Fry two eggs in another frying pan, and heat two pita breads in the oven.

Serve everything together in a dish… you can fill the pita or eat it as is, it’s your choice ^^.
